How To Make Tofu Lasagna

Recipe For Tofu Lasagna
This recipe for tofu lasagna makes eight servings, and takes two and a half hours.
Ingredients:
1 (16 ounce) pack lasagna pasta sheets
(or 1 (16 ounce) pack of noodles )
2 pounds firm tofu
3 (10 ounce) packages frozen chopped spinach, thawed and drained
2 tablespoons minced garlic 1/4 cup chopped fresh basil
1/4 cup chopped parsley
1/2 teaspoon salt
ground black pepper to taste
Tomato Sauce:
2 tablespoons olive oil
3 tablespoons minced garlic
1 1/2 cups chopped onion 4 (14.5 ounce) cans tomatoes
1/2 cup chopped fresh basil
1/2 cup chopped parsley
1/3 cup tomato paste
1 teaspoon salt
1 teaspoon ground black pepper
Prepare the sauce for the tofu lasagne first.
Heat the olive oil in a large saucepan over medium heat.
Sauté the onions for about 5 minutes until they are soft.
Add the garlic and cook 5 minutes longer.
Next, add the tomatoes, tomato paste, basil and parsley to the saucepan, allowing them to simmer for one hour.
Add the salt and pepper.
If you are using noodles, use this time to also boil the noodles,following the package instructions. Drain and rinse the noodles well.
Preheat the oven to 400 degrees Fahrenheit.
Place the tofu blocks in a large bowl and add the garlic, basil and parsley. Mash all the ingredients together with your fingers and mix well.
Spread 1 cup of the tomato sauce in the bottom of a 9×13 inch dish.
Place a layer of lasagne sheets (or a single layer of noodles) on top of the sauce.
Sprinkle one-third of the tofu mixture over the pasta.
Distribute the spinach evenly over the tofu.
Ladle 1 1/2 cups tomato sauce over the spinach, followed by another layer of pasta.
Sprinkle another 1/3 of the tofu mixture over the pasta. Drizzle 1 1/2 cups tomato sauce on top of the tofu, and cover with a final layer of pasta.
Top the lasagne pasta with the remaining tofu mixture and pour on the tomato sauce left.
Cover with foil and bake the tofu lasagna for 30 minutes.
Serve hot with salad and some delicious bread.
